Elderflower, Strawberry and Mint Traybake
Nothing says summer quite like a glass of Pimm’s and Wimbledon. For this month’s Small Batch Bake we have channelled this inspiration and created a cake perfect for summer. A vanilla sponge has been drizzled with elderflower syrup and sandwiched together with a strawberry and mint jam from Claire’s Handmade. We then whipped up a big ol’ batch of our mascarpone icing, added a touch more elderflower and hand piped each cake. On the top we sprinkled some dried mint and strawberries. It’s pretty, sweet and yet refreshing with the addition of the mint.

News from the bakery
This month we have been developing some new products, with the ‘soft launch’ of our new Earl Grey Citrus Tea Loaf. It’s currently available in our shop and markets, and will soon be available on the website to both retail and wholesale. It’s a lovely, light fruited cake, made with fresh orange and lemon zest. The vine fruits are soaked in earl grey tea, giving them an almost jammy texture. The feedback has been really positive so far, with one lady claiming ‘It tastes homemade, just like one my grandma used to make, she was a brilliant baker’. We love how good it tastes, and we know it’s amazing toasted with butter too.
Our Ginger Jake Grab Bags have been flying out the door, with more than one person confessing to finding the addictive. As they have proven so popular we will be adding a couple more items to the range – watch this space.
