
As July settles in and summer starts to feel a little more established, this month’s Small Batch Bake takes its cue from one of the season’s most recognisable flavour pairings.

Our Peach Melba traybake is a fresh, fruit‑led cake inspired by the classic combination of peach and raspberry — something that feels right at home alongside warm days, lighter moments, and the rhythm of the Wimbledon fortnight.
At its base is a light, fluffy sponge, layered with a house‑made peach and raspberry jam. The sweetness of the peach sits comfortably alongside the sharper notes of raspberry, creating a balance that feels both familiar and just a little different.
The cake is topped with a smooth mascarpone buttercream, gently infused with peach to bring everything together without overpowering the fruit. Each traybake is then finished with a scattering of dried raspberries and meringue pieces, adding a light crispness and a subtle nod to the traditional Peach Melba dessert.
It’s a cake that feels very much of the moment — not overly rich, not overly sweet, just carefully put together and easy to enjoy. The kind of bake that works just as well at the table as it does alongside a cup of tea in the garden.
