As we move into June, it finally feels like summer is settling in – and this month’s Small Batch Bake reflects that shift perfectly.
Our Strawberry, Basil and Lime Traybake is a fresh, vibrant cake that brings together classic summer flavours with a slightly unexpected twist. It’s also a bake some of you may already recognise, having recently been awarded a Gold Medal at Britain’s Best Cake in the Modern Cake category.
At its heart is a light, fluffy sponge, layered with a house‑made strawberry and basil jam, where sweetness is balanced with a subtle herbal note. It’s topped with a smooth mascarpone buttercream, infused with fresh lime juice and zest, adding brightness and lift.
Each traybake is finished with dried strawberries and handmade crystallised lime, bringing a gentle sharpness and texture that ties everything together.
It’s colourful, full of flavour, and very much in keeping with the time of year — a cake that feels just right for longer days and lighter moments.
A Quick Look Back at May
With the run of bank holidays and a particularly busy few weeks in the bakery, we didn’t get the chance to properly share May’s Small Batch Bake — our Lemon, Elderflower and White Chocolate cake.
Despite that, it proved incredibly popular and sold out within the first few weeks, which we were delighted to see.
