Our strawberry, basil and lime traybake is a vibrant summer cake, handmade in small batches at Ginger Bakers in the Lake District.

This award‑winning bake was recently recognised with a Gold Medal at Britain’s Best Cake in the Modern Cake category, and has quickly become a favourite for its fresh, balanced flavour.

The cake itself is a light, fluffy sponge layered with a house‑made strawberry and basil jam, bringing together sweetness and a subtle herbal note. It is topped with a smooth mascarpone buttercream, infused with fresh lime juice and zest for a bright, citrus finish.

Each traybake is delicately finished with a sprinkle of dried strawberries and handmade crystallised lime, adding texture and a gentle sharpness that lifts the whole cake.
